Of course, you can serve these yummy potatoes any time of the year but they are particularly perfect for Easter, especially if you are serving ham.

Au Gratin Potatoes

1/2 cup chopped onion
2 tablespoons butter
1 tablespoon flour
1 teaspoon salt
1/4 teaspoon pepper
2 cups half-and-half
1 1/2 cups shredded Cheddar cheese
6 potatoes
1/2 cup shredded Cheddar cheese (for topping)

Cook and stir onion in butter in saucepan until onion is tender. Stir in flour, salt and pepper. cook over low heat, stirring constantly, until mixture is smooth and bubbly. Remove from heat. Stir in half-and-half and cheese. Heat until bubbly, stirring constantly. Cook and stir about 1 minute until thickened. Peel and slice potatoes, and arrange in an ungreased baking dish. Pour cheese sauce over potatoes. Bake uncovered at 350 for 75 minutes, until potatoes are tender and top is brown and bubbly. Sprinkle with remaining cheese. Return to oven for about 4 minutes until top is lightly browned. 6 servings.
